Several friends are posting 1st Day of School pictures already!? I’ve been in Texas so long now, I haven’t kept up with the school schedules for my previous home state (Florida). What happened to starting the Thursday before Labor Day Weekend?!? I thought starting school around the 25th of August was early, but the 10th of August…oh boy.

With the stories of hustling out the door in the mornings already being posted on social media, I thought I would share an easy, healthy, recipe to grab on your way out the door.

Just combine all the ingredients; shape into the size of cookie you prefer (I make 20 out of the recipe); freeze on a cookie sheet until hard; then bag up for a more compact storage. Enjoy from the freezer on your ride to school or work!
